Al pastor, is a preparation of spit-grilled slices of pork originating in the Central Mexican region of Puebla, although today it is a common menu item found in taquerías throughout Mexico.
Normally, al pastor is made with boneless pork shoulder sliced super, super thin. If you are lucky enough to live near a Mexican meat market, you can probably find it right at the meat counter.
Made with chiles, orange juice, & achiote paste, this al pastor marinade is earthy, smoky, citrusy, & so good!
