ACHIOTE PASTE OR RECADO ROJO
Achiote paste Recado Rojo is a popular blend of spices. It is now strongly associated with Mexican and Belizean cuisines, especially Yucatán and Oaxaca. The spice mixture usually includes annatto, oregano, cumin, clove, cinnamon, black pepper, allspice, garlic, and salt.
The Achiote Paste and the Yucatecan achiote paste are exactly the same product. In Yucatan, nobody does their own errands, because in the popular markets there are errand stalls specialized in selling them. Over time, housewives identify which stall they like the achiote the most, which is why there are some markets and stalls that are famous for their errands or achiote.
The Achiote Paste refers to a Yucatecan preparation, the Mayan Indians prepared it (“kuux”) by grinding seeds over and over again until they had a paste or powder. Recado then is an essential seasoning in the local cuisine of the Yucatan.
Recados or collections are a mestizo heritage between native ingredients such as achiote, and those that were brought from the Old World, such as orange or garlic. It is served as a daily meal, or also for special or ceremonial occasions. The recipes are diverse and abundant in local cookbooks.
